Protein Chocolate Mousse
A rich, naturally sweetened chocolate mousse made with dry-curd cottage cheese and cocoa powder. An optional chocolate-and-coconut-oil shell adds a crisp topping that cracks when served.

Ingredients
- 1 cup Dry-curd cottage cheese (Use 4% milkfat or higher for the best flavor and texture.)
- 2 tbsp Unsweetened cocoa powder
- 3 tbsp Maple syrup (Use more or less to taste.)
- 1 tsp Vanilla extract (Optional.)
- Salt (A pinch, or to taste.)
- 2 tbsp Chocolate chips (Optional, for the chocolate shell.)
- 1 tsp Coconut oil (Optional, for the chocolate shell.)

Add the dry-curd cottage cheese, cocoa powder, maple syrup, vanilla extract, and salt to a blender or food processor. Blend until completely smooth and mousse-like, stopping to scrape down the sides if needed.

Transfer the blended mousse to a glass container or small serving dish, smoothing the surface.

If using the optional shell, combine the chocolate chips and coconut oil in a microwave-safe bowl. Melt in short intervals, stirring between each, until smooth. Alternatively, melt them gently over a double boiler.

Pour the melted chocolate mixture evenly over the mousse and spread it into a thin, smooth layer.

Refrigerate until the chocolate shell has hardened, about 30 minutes. Crack through the shell and serve.
Notes
The chocolate shell is optional. The creator states that the whole batch contains approximately 45 g of protein, depending on the cottage cheese used.
