Ingredients

  • 1 fresh pumpkin (roasted, cooled, and pureed; store-bought canned pumpkin can be substituted)
  • 2 cup rolled oats (old-fashioned or quick-cooking)
  • 1.5 cup all-purpose flour
  • 0.5 cup butter (softened)
  • 1 cup brown sugar (packed)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 1 cup powdered sugar (for the icing)
  • 1 tbsp milk (for the icing; add more as needed for consistency)

Steps

  1. 1

Prepare the pumpkin by roasting a fresh pumpkin until soft. Once roasted, let it cool completely and mash or puree it until smooth.

  2. 2

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. 3

In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

  4. 4

Add the egg, vanilla extract, and the cooled fresh pumpkin puree to the butter mixture. Mix well (the author suggests using your hands for the best consistency).

  5. 5

In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.

  6. 6

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  7. 7

Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. 8

Bake for 10-12 minutes or until the edges are lightly golden.

  9. 9

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  10. 10

While the cookies cool, prepare the icing by whisking together the powdered sugar and milk until a thick but dippable consistency is reached.

  11. 11

Dip the tops of the cooled cookies into the icing, allowing the excess to drip off so it only coats the ridges of the oatmeal texture. Let the icing set before serving.

Notes

The author emphasizes using fresh roasted pumpkin rather than canned for the best flavor and texture. If using canned pumpkin, ensure it is pumpkin puree and not pumpkin pie filling.
