High-Protein Tofu Burritos
Crispy, taco-seasoned shredded tofu is wrapped in large tortillas with creamy cottage-cheese queso and optional burrito toppings. The tofu gets golden and crisp around the edges while remaining high in plant-based protein; use vegan queso to make the burritos fully vegan.

Ingredients
- 1 block firm or extra-firm tofu (Approximately one standard 14-ounce block; shred on the large side of a box grater.)
- 2 tbsp taco seasoning
- 3 tbsp olive oil (For drizzling over the tofu.)

- 2 large flour tortillas (Use two large tortillas.)

Using the large side of a box grater, shred the entire block of tofu directly onto the prepared baking sheet. If large chunks break off, gently push them through the grater so the tofu is shredded as evenly as possible.

Drizzle the shredded tofu with the olive oil. Sprinkle over the fine sea salt and taco seasoning. Toss thoroughly with your hands or a spatula until the tofu is evenly coated.

Spread the seasoned tofu across the baking sheet in a thin, even layer. Avoid piling it up, which will prevent it from becoming crisp.

Bake for 30–35 minutes, checking around the 25-minute mark to ensure it is not burning. Continue baking until the tofu is browned and crisp around the edges.

Remove the baking sheet from the oven and let the tofu cool for about 10 minutes, until it is cool enough to handle.
