Spicy Nigerian Indomie Noodles

- 2 Indomie Instant Noodles (Standard packs (70g-80g each))
- 2 tbsp Vegetable Oil (For stir-frying)
- 0.5 Red Onion (Sliced)
- 2 Scotch Bonnet Peppers (Chopped (adjust to heat preference))
- 0.5 cup Mixed Bell Peppers (Diced (red and green))
- 0.25 cup Carrots (Julienned or diced)
- 2 packet Indomie Seasoning Powder (From the noodle packs)
- 1 tsp Dark Soy Sauce (For color and depth)
- 2 cup Water (For boiling noodles)

Bring a pot of water to a boil. Add the Indomie noodle cakes and cook for 2-3 minutes until softened but still slightly firm (al dente). Drain the water and set the noodles aside.

In a non-stick pan or wok, heat the vegetable oil over medium-high heat.

Add the sliced red onions and chopped scotch bonnet peppers to the pan. Sauté for 1-2 minutes until the onions are translucent and fragrant.

Add the diced bell peppers and carrots to the pan. Stir-fry for another 2 minutes until the vegetables are slightly softened but still retain a crunch.

Add the Indomie seasoning powder and the dark soy sauce to the vegetable mixture. Stir well to combine the flavors.

Add the cooked noodles into the pan. Toss thoroughly with the vegetable and spice mixture until every strand is evenly coated and the noodles are heated through.

Notes
