Ingredients

  • 50 g Parmesan cheese (cut into 3 cm pieces, plus extra to serve)
  • 40 g brown onion (diced)
  • 200 g shortcut bacon rashers (cut into 3-4 cm pieces; can substitute with pancetta)
  • 40 g extra virgin olive oil
  • 200 g pouring cream (whipping cream)
  • 450 g water
  • 1 tsp sea salt
  • 250 g dried macaroni pasta
  • 1 egg (beaten)

Steps

  1. 1

Place the 50g of Parmesan cheese pieces into the Thermomix mixing bowl and grate for 10 seconds at speed 10. Transfer to a small bowl and set aside.

  2. 2

Place 40g diced brown onion, 200g shortcut bacon pieces, and 40g extra virgin olive oil into the mixing bowl. Sauté for 5 minutes at 120°C on speed 1.

  3. 3

Add 200g pouring cream, 450g water, and 1 tsp sea salt to the mixing bowl. Heat for 6 minutes at 100°C on speed 1.

  4. 4

Add 250g dried macaroni pasta. Cook for the time indicated on the pasta package (approximately 8-10 minutes) at 100°C on Reverse Speed Soft or Speed 1.

  5. 5

Add the reserved grated Parmesan cheese and 1 beaten egg to the mixing bowl. Mix for 30 seconds on Reverse Speed 2 to combine and thicken the sauce.

  6. 6

Serve immediately, garnished with extra grated Parmesan cheese if desired.

Notes

You can substitute the shortcut bacon with 200g of pancetta cut into 3-4 cm pieces for a more traditional flavor profile.
