Ingredients
- 1 packet filo pastry (standard 375g packet)
- 125 g unsalted butter (melted, for brushing)
- 395 g sweetened condensed milk (1 standard tin)
- 1 cup milk (full cream preferred)
- 1 egg (large)
- 1 tsp vanilla extract

Preheat your oven to 180°C (350°F).

Lay out a sheet of filo pastry and brush it lightly with melted butter.

Scrunch the buttered sheet up loosely and place it into a baking dish. Repeat this process with the remaining sheets of filo until the dish is full.

Place the dish in the oven and bake at 180°C for 20 minutes until the pastry is lightly golden.

While the pastry is baking, prepare the custard. In a mixing bowl, combine the sweetened condensed milk, milk, egg, and vanilla extract.

Give the mixture a good stir until well combined.

Remove the pastry from the oven and pour the condensed milk mixture evenly over the crumpled pastry.

Return the dish to the oven and bake for another 20 minutes at 180°C until the top is golden and crisp and the center is gooey.
Notes
The texture should be a contrast between the crunchy top layers of filo and the soft, custard-soaked bottom layers.
