Ingredients

  • 3.5 sweet potatoes (peeled and sliced lengthwise; about 3-4 large potatoes)
  • 2 tbsp olive oil (for tossing potatoes and sautéing onions)
  • 1 lb ground beef
  • 2 yellow onions (diced)
  • garlic powder (to taste)
  • kosher salt (to taste)
  • Badia Complete seasoning (to taste)
  • 1 tsp dried basil
  • 2 jar marinara sauce (approx. 24-25 oz each)
  • fresh basil (hand-torn)
  • 15 oz ricotta cheese
  • 2 cup fresh spinach (chopped)
  • 1 egg (large)
  • 0.5 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cup mozzarella cheese (shredded, for layering and topping)

Steps

    Preheat your oven to 375°F (190°C).

    Toss the sliced sweet potatoes in olive oil until evenly coated.

    Lay the sweet potato slices flat in a baking dish and bake for 12 minutes. They should be softened but not fully cooked through.

    In a large skillet or pot, sauté the diced yellow onions in olive oil until translucent.

    Add the ground beef to the skillet and cook until fully browned and cooked through.

    Season the meat with garlic powder, kosher salt, Badia Complete seasoning, and 1 teaspoon of dried basil.

    Pour in the two jars of marinara sauce and add the hand-torn fresh basil. Stir to combine and let the sauce simmer.

    In a medium bowl, mix together the ricotta cheese, chopped fresh spinach, large egg, grated Parmesan, Italian seasoning, and salt to taste.

    To assemble, spread a layer of meat sauce on the bottom of a baking dish.

    Add a layer of the pre-baked sweet potatoes over the sauce.

    Spread a layer of the ricotta mixture over the sweet potatoes, then sprinkle with mozzarella cheese.

    Repeat the layers (meat sauce, sweet potatoes, ricotta mix, mozzarella) until the dish is full, finishing with a generous layer of mozzarella on top.

    Cover the baking dish with foil and bake at 375°F for 35 minutes.

    Remove the foil and broil for 2–3 minutes until the cheese is golden and bubbly, watching closely to prevent burning.

Notes

Letting the lasagna rest is crucial for clean slices, as the sweet potatoes release moisture during baking. You can use a mandoline to get uniform sweet potato slices.
