  • 2.5 cup shelled raw walnuts (Soaked in hot water for at least 2 hours, or overnight in the refrigerator, then drained)
  • 15 oz black beans (1 can; drained and rinsed)
  • 0.5 white onion (Roughly chopped)
  • 3 tbsp chipotle peppers in adobo (Diced)
  • 0.25 cup refined coconut oil (Plus a small amount of oil for cooking the burgers)
  • 1.5 tsp granulated garlic
  • 1 tsp smoked paprika
  • 1.5 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp vegan Worcestershire sauce
  • 3 tbsp tapioca starch
  • 1 cup panko bread crumbs
  • burger buns or lettuce (For serving)
  • vegan mayonnaise (For serving)
  • vegan sliced cheese (For serving)
  • pickles (Sliced, for serving)
  • red onion (Sliced, for serving)

Steps

    Soak the walnuts in hot water for at least 2 hours. Alternatively, soak them overnight in the refrigerator. Drain thoroughly before using.

    Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Drain and rinse the canned black beans. Spread them in a single layer on the prepared baking sheet.

    Bake the beans for 10–12 minutes, until their surface is dry. Remove them from the oven and allow excess heat to dissipate briefly.

    Add the dried black beans, drained walnuts, chopped white onion, diced chipotle peppers in adobo, refined coconut oil, granulated garlic, smoked paprika, chili powder, black pepper, salt, vegan Worcestershire sauce, tapioca starch, and panko bread crumbs to a large food processor.

    Pulse the mixture until it is well combined and holds together, stopping to scrape down the sides as needed. Do not process until completely smooth; some texture from the walnuts and beans is desirable.

    Divide the mixture into 6 portions and form each portion into a firm patty. Place the patties on a tray or plate and freeze for at least 1 hour so they firm up.

    Heat a sauté pan over medium heat and add a small amount of cooking oil. Place the chilled patties in the pan without crowding them.

    Cook the burgers until browned on the first side, about 4–5 minutes. Carefully turn them and cook the second side until browned and heated through, another 4–5 minutes. Add a little more oil if the pan becomes dry.
