Magical Apple Marshmallows

- 600 g apples (chopped)
- 100 g water (for cooking the apples)
- 40 g gelatin (hydrated (powdered or sheets))
- cornstarch (for dusting to prevent sticking)
Steps

Chop the apples into small pieces.

Place the chopped apples in a pot with the 100g of water.

Cook over medium heat until the apples are very soft.

Blend or process the cooked apples until a smooth puree is obtained.

Pour the apple puree into the bowl of a stand mixer.

Melt the 40g of previously hydrated gelatin in the microwave until liquid.

Add the melted gelatin to the apple puree.

Whip the mixture at high speed continuously until it becomes light, pale, and very fluffy.

Transfer the mixture to a mold and refrigerate for at least two hours to set.

Once firm, dust with cornstarch to prevent sticking when unmolding and cutting.
Notes
You can add a pinch of cinnamon to the apple puree to make it taste like apple pie. Either powdered or sheet gelatin can be used, as long as it is hydrated first.
