Magic Apple Marshmallows

- 600 g Apples (chopped)
- 100 g Water (for cooking apples)
- 40 g Gelatin (powder or leaf, bloomed)
- Cornstarch (for dusting)

Chop the apples into small pieces.

Add the chopped apples to a pot with 100g of water.

Cook the apples over medium heat until they are nice and soft.

Blend the cooked apples until smooth to create an apple purée.

Pour the apple purée into the bowl of a stand mixer.

Melt 40g of bloomed gelatin in the microwave until liquid.

Pour the melted gelatin into the apple purée.

Whisk the mixture on high speed using the stand mixer until it becomes light, fluffy, and significantly increased in volume.

Transfer the mixture to a lined or greased dish and let it chill in the refrigerator for at least two hours to set.

Once set, dust the surface with cornstarch to prevent sticking, then slice into squares.
Notes
You can use either powdered gelatin or gelatin leaves; just ensure they are bloomed in a small amount of cold water before melting. The cornstarch is essential for handling the marshmallows as they are naturally quite sticky.
