Crispy Flourless Potato Tostadas
Golden, crispy potato tostadas on the outside but soft on the inside. The potatoes are only partially cooked to activate their natural starch, allowing them to be grated and shaped without using flour.

Ingredients
- 4 large potatoes (Only partially cooked and then grated; they must remain firm.)
- 2.5 tbsp ghee or butter (Use between 2 and 3 tbsp, as needed for cooking.)
- salt and pepper (To taste.)
- 1 tbsp cornstarch (Optional; helps achieve a crispier texture.)

Wash the potatoes and place them in a pot of water. Cook them for exactly 6 minutes from the moment the water begins to boil, without cooking them completely. They should be partially cooked, firm in the center, and cool enough to grate.

Drain the potatoes and let them cool slightly until they can be handled. Carefully grate them using the large holes of a box grater; the goal is to preserve a grated potato texture, not turn them into mashed potatoes.

Place the grated potato in a bowl. Add 2 to 3 tbsp of ghee or butter, salt and pepper to taste, and the cornstarch if you want a crispier crust.

Gently combine all the ingredients until the grated potato is well coated and the mixture can be compacted. Do not knead it excessively, so it retains some texture.

Preheat a griddle, skillet, or waffle maker over medium-high heat and lightly grease it with some of the remaining ghee or butter, if necessary.

Shape the potato mixture into small mounds or compact portions and place them on the griddle or in the waffle maker, leaving space between them. Press them lightly so they have an even shape and make good contact with the hot surface.

Cook until the underside is well browned and crispy. If using a griddle, flip them with a spatula and cook the other side until browned as well; if using a waffle maker, close it and cook until the tostadas are golden on both sides. Serve when crispy on the outside and soft on the inside.
Notes
The key is not to cook the potatoes completely: the 6 minutes activate the starch and allow them to be grated while they are still firm. Serve as a side dish with salads or proteins, or eat them on their own. The cornstarch is optional, and the recipe can also be prepared without it.
