Weights are estimates. Together, the ingredients weigh about 500 g before cooking, which is about 500 g per serving.

Steps

  1. Mix the egg, egg white, Greek yogurt, almond flour, baking powder, and a pinch of salt until well combined.

  2. Pour the mixture into a microwave-safe container.

  3. Microwave for 2 minutes and 30 seconds. Alternatively, bake at 180 °C (350 °F) for approximately 15–20 minutes, until a toothpick inserted in the center comes out dry.

  4. Allow the cooked bread to cool.

  5. Cut the bread in half to form the two slices.

  6. Spread the cream cheese or ricotta cheese over the bread.

  7. Add the light mozzarella and the two slices of turkey ham. If preferred, replace the ham with one of the listed alternatives.

  8. Place the sandwich in a panini press or sandwich maker until the cheese melts.

  9. Remove from the press and serve immediately.

Notes

The recipe indicates approximately 15–16 g of protein for the bread, 28–32 g for the filling, and more than 40 g in total. The chicken, natural turkey, tuna, or scrambled egg alternatives replace the turkey ham and should not be added in addition to it. The total time of under 10 minutes mainly applies to microwave preparation; baking requires approximately 15–20 minutes.
