Weights are estimates. Together, the ingredients weigh about 1.3 kg before cooking, which is about 165 g per serving.

Steps

  1. Roughly chop the raw, deveined, deshelled jumbo shrimp. Be sure the shrimp are raw rather than already cooked.

  2. Add the chopped shrimp, jumbo lump crab meat, mayonnaise, breadcrumbs, mozzarella, cheddar, green onions, and all-purpose rub to a bowl.

  3. Gently fold the mixture together, taking care not to break up the crab meat so it remains pleasantly chunky.

  4. Let the frozen garlic Texas toasts sit out for about 5–10 minutes, until they are no longer solidly frozen.

  5. Gently press the softened garlic toasts, then add plenty of the shrimp-and-crab topping to each one.

  6. Place the topped toasts on a wire rack and finish them with additional all-purpose rub.

  7. Preheat the Traeger or another grill to 350°F (180 °C) (175°C (350 °F)).

  8. Grill the topped toasts at 350°F (180 °C) for about 20–25 minutes, until the topping is cooked through and the toasts look nicely finished.

  9. Plate the grilled toasts, then finish them with fresh lemon juice and plenty of fresh Parmesan cheese.

Notes

The source does not specify the exact number or brand of Texas toasts, the amount of all-purpose rub, green onions, lemon juice, or Parmesan, so those amounts are approximate or to taste. The source also does not explicitly state the topping's final visual or internal doneness cue beyond describing the finished toasts as looking nice.
