Ingredients
- 3 eggs (yolks and whites separated)
- 150 g lactose-free Greek yogurt
- salt (a pinch)
- vanilla or cinnamon (optional for sweet version)
Steps
- 1
Separate the whites from the yolks of the 3 eggs.
- 2
In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- 3
In another bowl, mix the egg yolks with the 150g of lactose-free Greek yogurt until you get a smooth and homogeneous mixture.
- 4
If you want a sweet version, add the vanilla or cinnamon to the yolk mixture at this time.
- 5
Gently fold the beaten whites into the yolk mixture using bottom-to-top folding motions to avoid losing the air.
- 6
Pour the mixture into a baking pan lined with parchment paper.
- 7
Bake at 170°C (340°F) for 25 to 30 minutes in a static oven until golden brown.
- 8
