Crockpot Garlic Butter Beef Bites, Potatoes and Green Beans

Ingredients
- 2 lb beef stew meat (seasoned with salt and pepper or steak seasoning)
- 1 tbsp cooking oil (for searing)
- 3 lb baby yellow potatoes (washed)
- 1 packet onion soup mix (dry mix)
- 1 stick garlic herb butter (0.5 cup; can substitute regular butter with Italian seasoning and garlic powder)
- 1.5 lb fresh green beans (trimmed)

Take 2 pounds of beef stew meat and season well with salt and pepper or your favorite steak seasoning.

Heat a little oil in a large skillet over high heat. Sear the beef for a couple of minutes per side until a nice brown crust has formed.

Transfer the seared beef into the crockpot.

Add approximately 3 pounds of washed baby yellow potatoes to the crockpot.

Sprinkle 1 packet of onion soup mix over the beef and potatoes.

Place 1 stick of garlic butter on top of the ingredients and mix everything together.

Cover and cook on High for 4-5 hours or on Low for 7-8 hours.

In the last hour of cooking, add 1-2 pounds of fresh green beans to the crockpot and continue cooking until tender.

Notes
Searing the meat is optional but highly recommended for better flavor and texture. If you don't have garlic butter, use regular butter and add Italian seasoning and garlic powder.
