Ingredients

  • 12 oz bacon (Chopped small; reserve the bacon grease and divide the cooked bacon for mixing in and topping.)
  • 2 boneless, skinless chicken breasts (Split horizontally into 4 thin pieces.)
  • 0.5 cup Parmesan cheese (Grated; for the chicken breading.)
  • 0.5 cup Italian-style breadcrumbs (For coating the chicken.)
  • 1 tbsp sun-dried tomato oil (Approximately; for toasting the gnocchi.)
  • 0.25 cup sun-dried tomatoes (Chopped.)
  • 1 package gnocchi (Package size not stated.)
  • 1 tbsp minced garlic
  • 0.75 cup low-sodium chicken broth
  • 1 cup heavy cream (Heavy whipping cream.)
  • smoked paprika (Season to taste.)
  • Italian seasoning (Season to taste.)
  • black pepper (Season to taste.)
  • 1 cup Parmesan cheese (Freshly shredded; stirred into the sauce.)
  • 1 cup fresh spinach (Chopped; the source gives a range of 1–2 cups.)
  • Parmesan cheese (Freshly shredded, for topping.)

Steps

  1. 1

Chop the bacon into small pieces. Add it to a large skillet and cook over low to medium heat until crisp. Remove the bacon, leaving the rendered bacon grease in the skillet, and reserve the cooked bacon.

  2. 2

While the bacon cooks, split each chicken breast horizontally to make four thin pieces. Season the chicken as desired.

  3. 3

In a separate bowl, combine the grated Parmesan and Italian-style breadcrumbs. Press each chicken piece into the mixture so both sides are coated.

  4. 4

Increase the skillet to medium-high heat. Add the breaded chicken to the bacon grease and cook for 3–4 minutes, then flip and cook for another 3–4 minutes, until golden. Remove the chicken from the skillet.

  5. 5

Wipe out any burnt bits from the skillet, leaving some of the remaining browned bits behind.

  6. 6

Add the sun-dried tomato oil, chopped sun-dried tomatoes, and gnocchi to the skillet. Toss until the gnocchi is lightly toasted.

  7. 7

Add the minced garlic and toss until fragrant.

  8. 8

Add the chicken broth and heavy cream. Season with smoked paprika, Italian seasoning, and black pepper, then stir until combined.

  9. 9

Increase the heat as needed and add 1 cup of freshly shredded Parmesan. Stir until the cheese melts and the sauce is smooth.

  10. 10

Add the chopped spinach and toss for a couple of minutes, until incorporated into the sauce.

  11. 11

Add half of the cooked bacon back to the skillet and mix it into the gnocchi and sauce.

  12. 12

Slice the cooked chicken and arrange it over the gnocchi. Top with more freshly shredded Parmesan and the remaining bacon. Serve immediately.

Notes

The gnocchi package size and the amounts of smoked paprika, Italian seasoning, black pepper, and finishing Parmesan are not specified. The source does not provide an exact temperature for the skillet beyond low-to-medium heat for the bacon and medium-to-high heat for the chicken.
