A simple and indulgent puff pastry treat filled with Biscoff cookie butter and topped with a sweet cookie butter glaze and crushed cookies.

Ingredients

  • 2 Puff pastry sheets (defrosted)
  • Biscoff cookie butter (for spreading on dough)
  • 1 Egg wash (1 egg beaten with a splash of water or milk)
  • 0.25 cup Cookie butter (warmed up for glaze)
  • 1 cup Powdered sugar
  • 3 tbsp Milk
  • Biscoff cookies (crushed, for topping)

Steps

    Defrost 2 puff pastry sheets according to package instructions.

    Preheat your oven to 400°F (200°C).

    Roll out the puff pastry dough and spread a layer of Biscoff cookie butter evenly onto one of the dough sheets.

    Place the second puff pastry sheet directly on top of the cookie butter-covered sheet.

    Cut the layered puff pastries into small rectangles resembling the shape of a pop tart.

    Using the tines of a fork, press firmly along the edges of each rectangle to seal the dough.

    Prepare an egg wash and brush it onto the top of each pastry.

    Bake in the preheated oven for 15 minutes until golden brown.

    Remove the pastries from the oven and let them cool for 5-10 minutes.

    In a medium-sized bowl, combine 1/4 cup warmed cookie butter, 1 cup powdered sugar, and 3 tablespoons of milk.

    Whisk the glaze ingredients together until a smooth glaze forms.

    Spread the cookie butter glaze on top of each cooled pop tart pastry.

    Crush up Biscoff cookies and sprinkle them over the glaze. Enjoy!

Notes

Ensure the puff pastry is fully defrosted but still cold for the best rise. Warming the cookie butter for the glaze makes it much easier to whisk into a smooth consistency.
