Ingredients

  • 2 chicken breast (large, cubed)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic (minced)
  • 1.5 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated)
  • 12 oz penne pasta (cooked al dente)
  • 2 cup baby spinach (fresh)

Steps

    Season the cubed chicken breast with salt, black pepper, and garlic powder.

    Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

    In the same skillet, melt the butter over medium heat.

    Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant, being careful not to burn it.

    Pour in the heavy cream and bring to a gentle simmer.

    Stir in the freshly grated parmesan cheese until the sauce is smooth and slightly thickened.

    Add the fresh baby spinach to the sauce and stir until it begins to wilt.

    Add the cooked penne pasta and the cooked chicken back into the skillet.

    Toss everything together until the pasta and chicken are thoroughly coated in the creamy sauce. Serve immediately.

Notes

For the best results, grate your own parmesan cheese as it melts much smoother than pre-shredded varieties. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.
