Steps
Preheat your oven to 350°F (180 °C) (175°C (350 °F)) and line an 8x8-inch baking pan with parchment paper.
Create your cinnamon roll topping by combining 3 tbsp melted butter/oil, 1/3 cup brown sugar, and 1/2 tbsp cinnamon powder into a small bowl. Mix well until a crumbly consistency forms and set aside.
In a large bowl, combine your 3 mashed bananas, 1/2 cup brown sugar, 1/2 cup melted butter/oil, 2 large eggs, and 1 tbsp vanilla extract. Mix well.
Fold in the 1 1/2 cups flour, 1/2 tbsp baking powder, and 1/2 tbsp cinnamon into the wet banana batter. Mix until thoroughly combined.
Pour the batter into the prepared parchment paper lined 8x8 baking pan.
Spoon the prepared cinnamon roll topping mixture over the top of the batter in an even layer.
Bake at 350°F (180 °C) for 30-33 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool. While the cake is cooling, prepare the vanilla glaze by combining 1 cup powdered sugar, 1-2 tbsp milk, and 1 tsp vanilla extract into a small bowl.
Drizzle the glaze over the top of the cooled cake, slice, and enjoy!
Notes
The author suggests using either butter or coconut oil depending on dietary preference. For the glaze, start with 1 tbsp of milk and add more only if needed to reach a drizzling consistency.
