ANZAC Slice
A chewy, buttery slice inspired by classic ANZAC biscuits, packed with rolled oats and desiccated coconut. Optional chocolate chips add extra sweetness to this easy lunchbox treat.

Ingredients
- 1 cup Rolled oats
- 1 cup Plain flour
- 0.667 cup Brown sugar
- 0.667 cup Desiccated coconut
- 125 g Butter
- 2 tbsp Golden syrup
- 2 tbsp Water
- 0.5 tsp Bicarbonate of soda
- 1 cup Chocolate chips (Optional; allow the mixture to cool slightly before adding so the chips do not melt.)

Preheat the oven to 160°C fan-forced (320°F convection). Line a slice tin with baking paper, leaving some paper overhanging the sides for easy removal.

Place the butter, golden syrup, and water in a microwave-safe bowl. Microwave in short intervals, stirring as needed, until the butter has completely melted and the mixture is smooth.

Add the bicarbonate of soda to the warm butter mixture and stir it through thoroughly.

Add the rolled oats, plain flour, brown sugar, and desiccated coconut to the bowl.

Mix until the dry ingredients are evenly coated and a cohesive slice mixture forms.

If using chocolate chips, allow the mixture to cool slightly, then stir in the chocolate chips until evenly distributed.

Transfer the mixture to the prepared slice tin and press it firmly into an even layer, paying particular attention to the corners and edges.

Bake for about 25 minutes, or until the surface is lightly golden and the slice is set around the edges.

Allow the slice to cool completely in the tin before lifting it out and cutting it into pieces.
Notes
Chocolate chips are optional. The source specifies a 160°C fan oven; conventional ovens may require a slightly higher temperature. Store cooled slices in an airtight container.
