Ingredients

  • 250 g plain sweet biscuits (Such as Arnott's Marie biscuits; crushed with a few larger chunks remaining)
  • 2 tbsp cocoa powder (Sifted)
  • 100 g butter
  • 200 g peppermint chocolate (Such as Cadbury Peppermint chocolate)
  • 300 g sweetened condensed milk
  • peppermint extract (1–2 drops, optional)
  • 250 g white chocolate (Melted for the topping)
  • 2 tbsp coconut oil (Melted with the white chocolate)
  • green food colouring (3–4 drops; use a couple of drops to swirl through the topping)

    Grease a 16 x 22 cm slice tray and line it with baking paper, leaving some overhang to make the chilled slice easy to lift out.

    Crush the plain sweet biscuits in a food processor until mostly fine crumbs form, deliberately leaving a few larger chunks for texture. Transfer the crumbs to a mixing bowl.

    Place the butter, peppermint chocolate, and sweetened condensed milk in a microwave-safe bowl. Microwave at 50% power in 30-second bursts, stirring thoroughly between bursts, until the mixture is smooth and fully melted.

    Pour the warm chocolate mixture over the biscuit crumbs. Add the peppermint extract, if using, and stir until all the crumbs are evenly coated and the mixture is well combined.
