Ingredients
- 8 oz low carb pasta (Care Free Kitchen Keto Pasta recommended)
- 2 chicken breasts
- 1 block cream cheese (8 oz block)
- 1 cup chicken broth
- 0.5 cup carrots (diced)
- 0.5 cup celery (diced)
- 0.5 cup onion (diced)
- salt (to taste)
- pepper (to taste)
- garlic powder (to taste)
- paprika (to taste)
- Italian seasonings (to taste)

Place the chicken breasts, cream cheese block, chicken broth, diced carrots, diced celery, and diced onion into a slow cooker.

Season the mixture with salt, pepper, garlic powder, paprika, and Italian seasonings to taste.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and the vegetables are soft.

Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks.

While shredding the chicken, bring a pot of salted water to a boil. Add the 8 oz of low carb pasta and cook according to the package instructions until tender.

Drain the pasta and return the shredded chicken to the slow cooker.

Add the cooked pasta to the slow cooker, stir to combine all ingredients into the creamy broth, and serve.
Notes
Pro tip: If you leave out the cream cheese, this tastes more like a traditional chicken noodle soup and is still very good. For the best keto results, use high-protein pasta like Care Free Kitchen brand.
