Flourless Cloud Bread Sandwich
Light and fluffy cloud bread made with egg, cream cheese, and almond flour. It can be filled as desired; the version shown contains ham and cheese.

Ingredients
- 3 large eggs (Separate the egg whites from the yolks; use 2 egg whites for whipping and 1 whole egg for the mixture.)
- 1 tbsp cream cheese (It can also be substituted with Greek yogurt, according to the video.)
- 2 tbsp almond flour (It can be substituted with flour made from another nut.)
- salt (To taste; use a pinch for whipping the egg whites and adjust the mixture if necessary.)
- 2 rebanadas ham (Optional filling; estimated amount for the version shown.)
- 2 rebanadas cheese (Optional filling; use your preferred cheese. Estimated amount for the version shown.)

Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper. You can also cook the bread in a nonstick skillet over low heat.

Separate two egg whites and place them in a clean bowl. Add a pinch of salt and beat until stiff peaks form: the whites should form firm peaks and retain their volume when the whisk is lifted.

In another bowl, place the whole egg and add the cream cheese. Mix until as smooth as possible, with no large lumps.

Fold the whipped egg whites into the egg and cream cheese mixture in two or three additions. Use gentle folding motions to avoid losing the air.

Add the almond flour and fold again just until incorporated. Avoid overmixing to preserve the fluffy texture.

Pour the mixture onto the baking sheet and spread it into a round or oval shape approximately 1 cm thick. If using a skillet, place the mixture in a nonstick skillet over low heat and cover.

Bake for approximately 10 to 12 minutes, until the bread is puffed, lightly golden, and firm to the touch. In a skillet, cook covered over low heat until the base is set and the surface no longer looks liquid; carefully flip it if necessary.

Remove the bread and let it rest for 1 or 2 minutes to stabilize. Open it or fold it according to the shape you chose.

Fill with the ingredients of your choice. For the version shown, place the ham and cheese in the center and serve as a sandwich.
