Ingredients

  • 0.667 cup mayonnaise (Two-thirds of a cup)
  • 0.333 cup plain Greek yogurt (One-third of a cup; the author mentions using Joplait)
  • 0.25 cup grated Parmesan cheese (One-quarter of a cup)
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp Worcestershire sauce (Also known as English sauce)
  • 2 tbsp Dijon mustard (The audio calls it Dijon mustard)
  • salt (A pinch, to taste)
  • ground black pepper (A pinch, to taste)
  • 2 large garlic cloves (The author mentions three cloves but decides to use two; finely grated)

Steps

  1. 1

Measure all the ingredients with measuring spoons and cups to maintain the recipe's exact proportions.

  2. 2

Place the mayonnaise in a large molcajete. Add the Greek yogurt and grated Parmesan cheese.

  3. 3

Add the olive oil, lemon juice, and Worcestershire sauce.

  4. 4

Add the Dijon mustard, a pinch of salt, and a pinch of black pepper.

  5. 5

Finely grate the two large garlic cloves directly over the molcajete.

  6. 6

Mix everything in the molcajete until you have a smooth, creamy dressing with no visible lumps. Taste and adjust the salt or pepper if necessary.

  7. 7

Serve the dressing with clean lettuce leaves as a dip, or toss it with your favorite lettuce to prepare a Caesar salad.

Notes

The video recommends preparing the dressing in a molcajete, although it can also be mixed in a bowl. Refrigerate it in a covered container and ideally consume it within 3 to 4 days. The recipe does not specify an amount of lettuce; use as much as desired for serving.
