Ingredients

  • 1 can Cannellini beans (Drained and rinsed; approximately 15 oz / 425 g can, yielding about 240 g drained beans)
  • 0.5 cup Oats
  • 0.25 cup Coconut oil
  • Salt (A pinch)
  • 0.25 cup Maple syrup
  • 1 tsp Vanilla extract
  • Baking soda (A pinch)
  • Milk (A splash, or enough to help the mixture blend smoothly; use dairy or plant milk)
  • 3 tbsp Black sesame powder (The creator describes this as approximately 3 packs)
  • Chocolate chips (To taste; optional)

Steps

  1. 1

Preheat the oven to 350°F (175°C). Line or lightly grease a small square baking pan so the blondies can be removed easily after baking.

  2. 2

Place the drained cannellini beans, oats, coconut oil, salt, maple syrup, vanilla extract, baking soda, and a splash of milk in a blender or food processor. Blend until the mixture is very smooth and thick, adding only enough milk to allow it to blend without remaining dry or lumpy.

  3. 3

Pour approximately half of the smooth batter into the prepared pan and spread it into an even layer.

  4. 4

Add the black sesame powder to the remaining batter in the blender or food processor. Blend again until the sesame powder is fully incorporated and the batter is evenly dark and smooth.

  5. 5

Pour the black sesame batter into the pan over the first layer, distributing it as evenly as possible.

  6. 6

Scatter chocolate chips over the batter, using as many as desired. They may be omitted if preferred.

  7. 7

Use a knife or skewer to gently swirl the two batters together, creating a marbled pattern without fully combining them.

  8. 8

Bake at 350°F (175°C) for about 35 minutes, until the blondies are set around the edges and the center no longer looks wet. Allow them to cool before slicing so they firm up and cut cleanly.

Notes

The original recipe does not specify a pan size; a small square pan, such as 8-inch (20-cm), is a reasonable choice. Because the recipe uses beans and a blendable batter, the texture is likely soft and fudgy. Store cooled blondies in an airtight container in the refrigerator for several days.
