Weights are estimates. Together, the ingredients weigh about 1.59 kg before cooking, which is about 395 g per serving.

Steps

  1. Preheat the oven to 400°F (200 °C) (200°C (400 °F)).

  2. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.

  3. Combine the dry orzo, frozen corn, sliced zucchini, and chopped onion in the prepared baking dish.

  4. Crumble the Boursin cheese over the top of the orzo mixture.

  5. Pour in the chicken bone broth, milk, whipping cream, and 1 tablespoon of olive oil.

  6. Season the mixture lightly with 1/2 teaspoon of salt and stir to combine everything evenly.

  7. Nestle the salmon fillets into the orzo mixture.

  8. Brush the salmon with the remaining 1 tablespoon of olive oil and season with the remaining 1 teaspoon of salt and the Cajun seasoning.

  9. Cover the pan tightly with aluminum foil.

  10. Bake in the preheated oven for 20 minutes.

  11. Remove the foil and gently stir the orzo around the edges, being careful to leave the salmon fillets intact.

  12. Return the dish to the oven uncovered and bake until the orzo is tender and creamy and the salmon flakes easily with a fork, about 10 to 15 minutes more.

  13. Squeeze optional lemon juice over the salmon and serve immediately.

Notes

For the best results, ensure the foil is tightly sealed to trap steam for the orzo to cook properly. You can use any spreadable gourmet garlic and herb cheese if Boursin is unavailable.
