Ingredients

  • 2 cup cooked chicken (Diced or shredded)
  • 5 cup romaine lettuce (Chopped)
  • 1 cup cherry tomatoes (Halved)
  • 1 cup black beans (Drained and rinsed)
  • 1 cup corn (Drained)
  • 0.5 red bell pepper (Diced)
  • 0.5 avocado (Diced)
  • 0.25 cup red onion (Finely chopped)
  • 0.25 cup shredded cheddar cheese
  • 0.25 cup fresh cilantro (Chopped; reserve some extra for finishing)
  • 0.25 cup crushed tortilla chips (Optional, for topping)
  • 0.5 cup Greek yogurt (For the creamy dressing)
  • 0.25 cup mayonnaise (For the creamy dressing)
  • 2 tbsp fresh lime juice (Plus fresh lime wedges for serving)
  • 1 tbsp salsa (For the dressing)
  • 1 tsp chili powder
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
  • salt and black pepper (To taste)
  • water (A splash, optional, to thin the dressing)
  • fresh lime wedges (For serving)

Steps

  1. 1

Make the dressing. Add the Greek yogurt, mayonnaise, fresh lime juice, salsa, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper to a bowl.

  2. 2

Whisk the dressing ingredients together until smooth and evenly combined. Add a splash of water if you want a thinner dressing.

  3. 3

Prepare the salad. Add the chopped romaine, cooked chicken, halved cherry tomatoes, drained black beans, drained corn, diced bell pepper, finely chopped red onion, diced avocado, shredded cheddar, and chopped cilantro to a large bowl.

  4. 4

Pour the creamy Tex-Mex dressing over the salad.

  5. 5

Gently toss until the dressing evenly coats the salad without excessively breaking up the avocado.

  6. 6

Finish the salad with the crushed tortilla chips, if using, and extra cilantro.

  7. 7

Serve immediately with fresh lime wedges.

Notes

The source does not specify an exact amount of salt, black pepper, extra cilantro, water, or lime wedges; add these to taste or as desired. The salad is intended to be served immediately.
