Ingredients
- 12 inch French or sourdough baguette (cut into 10 1-inch-thick slices)
- 4 egg whites
- 1 cup fat-free soy milk
- 0.25 tsp nutmeg
- 1 tsp vanilla
- 0.75 cup blueberries (coarsely chopped)
- 4 tbsp brown sugar (divided)
- 1 tbsp canola oil
- 0.25 cup chopped pecans (toasted; optional)

Cut 10 1-inch-thick slices from the French or sourdough baguette. Arrange the slices in the prepared baking dish.

Whisk in the soy milk, nutmeg, vanilla, and 2 tablespoons of the brown sugar to complete the custard.
