Ingredients

  • 1 lb ground beef (drained, reserve 2 tbsp grease)
  • 0.5 cup onion & bell pepper (diced)
  • 1 packet taco seasoning (to taste)
  • 1 cup jasmine rice (rinsed)
  • 1 cup salsa
  • 2 cup beef broth
  • 8 oz Mexican blend cheese
  • fresh cilantro (for garnish)

Steps

    Brown the ground beef in a large skillet over medium-high heat. Once fully cooked, drain the excess fat, leaving approximately 2 tablespoons of grease in the pan.

    Add the diced onion, bell pepper, and taco seasoning to the skillet. Sauté for 1–2 minutes until the vegetables begin to soften and the seasoning is fragrant.

    Add the rinsed jasmine rice to the skillet and toast it with the beef and vegetables for about 1 minute, stirring constantly.

    Stir in the salsa and beef broth, ensuring the rice is completely covered by the liquid.

    Bring to a boil, then cover the skillet with a lid and turn the heat down to low. Simmer for 20 minutes.

    Remove the skillet from the heat. Top the mixture with a blanket of Mexican blend cheese and fresh cilantro.

    Cover for a minute or two to let the cheese melt before serving.

Notes

Serve alone, with tortilla chips, or use as a filling for burritos.
