Giant Wagyu Steak and Lobster Tailgate Sandwich

Ingredients
- 3.5 lb Wagyu ribeye (Spinalis (cap) removed and rolled; eye cut into 1-inch slabs)
- Tequila lime habanero seasoning (Used for the ribeye cap roll)
- Spicy garlic buffalo seasoning (Used for the ribeye slabs)
- 6 Lobster tails (Fresh lobster tails, split for grilling)
- 2 tbsp Olive oil (For coating lobster)
- Lemon pepper seasoning (For lobster)
- 0.5 cup Unsalted butter (Melted with garlic and lemon for basting and finishing)
- 3 clove Garlic (Minced, for the butter bath)
- 1 Lemon (Juiced, for the butter bath)
- 2 Baguette (Large, toasted)
- 8 oz Garlic herb cream cheese (Softened for spreading)
- 0.25 cup Chives (Freshly chopped)
- 2 Green onions (Sliced)
- 2 tbsp Hot honey (For drizzling)

Prepare the Wagyu ribeye by pulling off the spinalis (the ribeye cap). Roll the cap tightly and tie it with butcher's twine to create a ribeye cap roll.

Season the ribeye cap roll generously with tequila lime habanero seasoning.

Sear the ribeye cap roll over high heat until it reaches a perfect medium-rare internal temperature. Remove from heat and let rest.

Cut the remaining eye of the ribeye into 1-inch thick slabs. Season these slabs with spicy garlic buffalo seasoning.

Sear the ribeye slabs hot and fast over the fire until cooked to your preferred doneness.

Prep the lobster tails by coating them with a little olive oil and lemon pepper seasoning.

Grill the lobster tails over the fire until the meat is opaque and firm.

Prepare a butter bath by melting butter with minced garlic and lemon juice. Toss the grilled lobster tails in this mixture to coat.

Remove the lobster meat from the shells and chop into bite-sized pieces. Slice the rested Wagyu ribeye into thin strips or bite-sized pieces.

Slice the baguettes open and toast them over the fire until golden.

Spread a thick layer of garlic herb cream cheese onto the toasted baguette.

Layer the sliced Wagyu steak and chopped lobster meat onto the sandwich.

Top the sandwich with chopped chives, sliced green onions, a drizzle of the remaining garlic lemon butter, and a generous drizzle of hot honey.

Notes
