Ingredients
- 16 oz macaroni (dried noodles, cooked until al dente)
- 14 oz kielbasa sausage (sliced thin; traditionally hot dogs)
- 1 yellow onion (small, diced)
- 2 can canned beans (approximately 15 oz each)
- 2 can stewed tomatoes (approximately 14.5 oz each)
Steps
- 1
Bring a large pot of salted water to a boil and cook the macaroni noodles until they are al dente. Drain and set aside.
- 2
Slice the kielbasa sausage into thin rounds.
- 3
In a Dutch oven over medium heat (or over a fire), add the sliced kielbasa and one small diced yellow onion.
- 4
Cook the meat and onion together until the sausage is lightly browned and the onions are softened.
- 5
Add two cans of canned beans and two cans of stewed tomatoes to the Dutch oven.
- 6
Stir in the cooked macaroni noodles.
- 7
Simmer the mixture together for a few minutes to allow the flavors to meld before serving.
Notes
The original recipe from the 1930s typically used sliced hot dogs instead of kielbasa. This is a very versatile dish intended to be made with whatever pantry staples are available.
