Ingredients
- 2 cup all-purpose flour
- black pepper (to taste)
- garlic powder (to taste)
- paprika (to taste)
- Colima salt (to taste)
- 1 tsp baking powder (referred to as Royal)
- 1 tsp mustard (yellow mustard)
- 2 eggs
- 0.5 cup beer (use the rest for drinking)
- 1 lb fish fillet (cut into strips)
- 1 lb shrimp (cleaned and deveined)
- vegetable oil (for frying)
- 0.5 cup mayonnaise
- 0.25 cup sour cream (sour cream)
- 0.25 cup media crema (table cream)
- 0.5 orange (juiced)
- 4 chiles de árbol (sautéed)
- 1 can chipotle peppers in adobo
- 12 corn tortillas (warmed)
- 1 cup guacamole

In a large mixing bowl, combine 2 cups of flour with pepper, garlic powder, paprika, and Colima salt to taste.

Add one teaspoon of baking powder (Royal), a teaspoon of mustard, and crack in two eggs.

Pour in half a beer and whisk the mixture thoroughly until it reaches a consistency similar to pancake batter.

Season the fish strips and shrimp with Colima salt and black pepper.

Heat vegetable oil in a deep pan until very hot.

Dip the fish and shrimp into the batter, ensuring they are fully coated, and carefully place them in the hot oil.

Fry until the pieces are golden brown and crispy, then remove and drain on paper towels.

Prepare the dressing by blending mayonnaise, sour cream, media crema, the juice of half an orange, salt, and pepper.

Add sautéed chiles de árbol and a can of chipotle peppers in adobo to the dressing mixture and blend until smooth and creamy.

Warm the tortillas and spread a layer of guacamole on each.

Notes
The batter consistency should be thick like hot cakes. You can make these tacos with just fish, just shrimp, or 'mixto' (both). Colima salt is recommended for authentic flavor.
