Ingredients

  • 2 Carrots (grated)
  • 1 Large zucchini (grated)
  • 80 g Low-fat grated cheese (author recommends Pizzottella)
  • 3 Eggs (can substitute with 165g egg whites for a lighter version)
  • 320 g Extra lean ground beef (can substitute with ground turkey; divided into 80g portions)
  • 4 Light processed cheese slices (such as Sottilette Light)
  • 40 g 0% Greek yogurt (for the sauce)
  • 40 g Light mayonnaise (for the sauce)
  • 5 g Sriracha (for the sauce)
  • Salt (to taste)
  • Black pepper (to taste)
  • Smoked paprika (mentioned in transcript)
  • Lettuce leaves (for garnish)

Steps

    Preheat your oven to 190°C (375°F) in static mode.

    Grate the carrots, zucchini, and the 80g of low-fat cheese.

    In a mixing bowl, combine the grated vegetables and cheese with the three eggs (or egg whites), salt, pepper, and smoked paprika. Mix until well combined.

    On a baking sheet lined with parchment paper, form four circles with the vegetable mixture to create the taco bases.

    Bake in the preheated oven at 190°C for 25 to 30 minutes until set and slightly golden.

    While the bases bake, prepare the sauce by mixing the Greek yogurt, light mayo, and sriracha in a small bowl.

    Once the bases are cooked, remove them from the oven. Take 80g of ground beef for each taco, season with salt and pepper, and smash it directly onto the top of each vegetable base.

    Transfer the tacos to a hot skillet or griddle, meat-side down. Cook thoroughly until the burger meat is well-browned and cooked through.

    Flip the tacos over so the vegetable side is down. Place a slice of light cheese on the meat and allow it to melt.

    Remove from heat and garnish with the prepared sauce and fresh lettuce leaves.

Notes

To make the recipe even lighter, use egg whites instead of whole eggs and ground turkey instead of beef. Nutritional values per taco: Original version ~326 kcal (31g Pro, 9.3g Carb, 17.9g Fat); Light version ~257 kcal (33g Pro, 10.4g Carb, 8.9g Fat).
