Ingredients
- 1 lb pasta (such as rotini, penne, or bow tie; cooked and cooled)
- 1 cup cherry tomatoes (halved)
- 1 bell pepper (diced)
- 0.5 red onion (finely diced)
- 0.5 cup kalamata olives (pitted and sliced)
- 2 tbsp fresh dill (chopped)
- 0.5 cup feta cheese (crumbled)
- 0.33 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 clove garlic (minced)
- 0.25 cup Greek yogurt (plain)
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp dried oregano
Steps
- 1
Cook the pasta in a large pot of salted boiling water according to package directions. Drain and rinse with cold water to stop the cooking process.
- 2
In a small bowl or jar, whisk together the olive oil, red wine vinegar, minced garlic, Greek yogurt, Dijon mustard, honey, and dried oregano until the dressing is smooth and emulsified.
- 3
In a large mixing bowl, combine the cooked and cooled pasta, halved cherry tomatoes, diced bell pepper, diced red onion, sliced kalamata olives, and fresh chopped dill.
- 4
Pour the prepared yogurt dressing over the pasta and vegetables.
- 5
Add the crumbled feta cheese to the bowl.
- 6
Toss all ingredients together until thoroughly combined and evenly coated in the dressing. Serve immediately or chill before serving.
Notes
For best results, let the salad sit in the refrigerator for 30 minutes before serving to allow the flavors to meld. You can add grilled chicken or chickpeas for extra protein.
