Weights are estimates. Together, the ingredients weigh about 500 g before cooking, which is about 125 g per serving.

Steps

  1. Press the tofu. Remove it from its package and line a container large enough to hold the block with several layers of paper towels or a clean kitchen towel. Place the tofu on top, cover it with several more layers of towels, and balance a heavy weight—such as a pan with canned goods in it—on top. Press for 20 minutes.

  2. Heat the air fryer to 375°F (190 °C).

  3. Use your hands to break the pressed tofu into nugget-size pieces, dropping them into a large bowl. The pieces may be as large or small as you prefer, keeping in mind that they will shrink as they cook.

  4. In a separate bowl, mix the dill pickle brine or caper brine, tamari, olive oil, and sugar.

  5. Pour the brine mixture over the tofu and toss thoroughly so the pieces are coated.

  6. Sprinkle the flour, garlic powder, smoked paprika, black pepper, and sea salt over the tofu. Stir until the seasoning mixture coats the pieces.

  7. Spray a piece of parchment with cooking oil and place it in the bottom of the preheated air-fryer basket.

  8. Transfer the tofu to the basket and spread it out evenly. Spray additional oil over the tops of the tofu nuggets.

  9. Air-fry for 20 minutes, flipping the nuggets halfway through.

  10. If the tofu is not crispy after 20 minutes, continue cooking for another 5 minutes, watching carefully so it does not burn.

  11. Serve the crispy tofu nuggets with ketchup or vegan barbecue sauce.

Notes

For an oven method, heat the oven to 375°F, line a baking sheet with parchment, spread the nuggets evenly on the sheet, spray them with oil, and bake until golden brown and crisp at the edges, about 40 minutes, flipping halfway through.
