- 8 oz elbow macaroni (1 box)
- 0.25 cup butter
- 0.25 cup all-purpose flour
- 0.5 tsp salt
- ground black pepper (to taste)
- 2 cup milk
- 2 cup shredded Cheddar cheese (freshly grated recommended)

Bring a large pot of lightly salted water to a boil.

Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes.

Meanwhile, melt butter in a saucepan over medium heat.

Whisk in flour, salt, and black pepper until smooth, about 5 minutes.

Slowly pour in milk, while constantly stirring; cook and stir until mixture is smooth and bubbling, about 5 minutes, making sure the milk doesn't burn.

Add Cheddar cheese and stir until melted, 2 to 4 minutes.

Drain macaroni and fold into cheese sauce until coated.

Notes
For a thicker mac and cheese, double the amount of macaroni. We recommend you grate your own cheese because pre-shredded cheese won't incorporate into the mixture as well as block cheese. To bake: complete the first three steps, top with bread crumbs or crackers, and bake at 350°F (175°C) for 15 minutes until bubbling. Store leftovers in an airtight container for 3-4 days; reheat with a splash of milk.
