A hearty, no-cook Cobb salad made with thawed cooked shrimp, avocado, tomatoes, greens, bacon, and blue cheese. Its creamy, spicy-sweet serrano, lime, honey, and mustard dressing balances the rich cheese and avocado.

Weights are estimates. Together, the ingredients weigh about 1.57 kg before cooking, which is about 390 g per serving.

Steps

  1. Place the frozen shrimp in a colander in the sink and separate them under cold running water. Leave them to thaw in the colander while preparing the dressing, rinsing them occasionally if they begin to stick together.

  2. Stem the serrano and mince it together with the garlic. Place the minced chile and garlic in a large salad bowl with the lime juice, Dijon mustard, vegetable oil, and honey.

  3. Add 1½ teaspoons of kosher salt to the dressing and stir until it comes together.

  4. Pit and peel the avocados, then cut them into bite-sized pieces and place them in the salad bowl as you go.

  5. Halve the tomatoes and add them to the bowl along with the arugula or mixed baby greens.

  6. Add the diced bacon if using.

  7. Shake the thawed shrimp in the colander to dry them, then remove and discard the tails.

  8. Add the shrimp to the salad bowl and crumble the Gorgonzola or blue cheese over the top.

  9. Toss until all of the ingredients are evenly dressed. Taste and season with additional salt as needed, then serve immediately.

Notes

Serve with crusty buttered bread if desired, or warm tortillas for tableside Cobb tacos. Seeding the serrano reduces its heat. The source provides a 5-minute cook time, although the listed preparation is otherwise no-cook.
