  • 2 lb broccoli (florets roughly chopped into 1-inch pieces, stems trimmed, peeled, and cut into 1/4-inch-thick slices)
  • 1 onion (roughly chopped (about 1 cup))
  • 2 garlic cloves (minced or pressed through garlic press (about 2 teaspoons))
  • 1.5 tsp dry mustard powder
  • cayenne pepper (pinch)
  • 1 tsp Table salt (plus more to taste)
  • 3 cup water (divided; use 3-4 cups total to adjust consistency)
  • 0.25 tsp baking soda
  • 2 cup low-sodium chicken broth (can substitute with vegetable broth)
  • 2 oz baby spinach (2 loosely packed cups)
  • 3 oz sharp cheddar cheese (shredded (3/4 cup))
  • 1.5 oz Parmesan cheese (grated fine (about 3/4 cup), plus extra for serving)
  • Ground black pepper (to taste)

Steps

    Heat 2 tablespoons unsalted butter in a large Dutch oven over medium-high heat.

    When the butter foaming subsides, add the chopped broccoli, chopped onion, minced garlic, 1 1/2 teaspoons dry mustard, a pinch of cayenne, and 1 teaspoon salt.

    Cook, stirring frequently, until the mixture is fragrant, about 6 minutes.

    Add 1 cup of water and 1/4 teaspoon baking soda to the pot and bring to a simmer.

    Cover and cook, adjusting the heat to maintain a simmer, until the broccoli is very soft, about 20 minutes, stirring once during cooking.

    Add 2 cups of chicken broth and 2 cups of water and increase the heat to medium-high.

    When the mixture begins to simmer, stir in 2 ounces of baby spinach and cook until wilted, about 1 minute.

    Transfer half of the soup to a blender, add the shredded cheddar and grated Parmesan, and process until smooth, about 1 minute.

Notes

To make a vegetarian version of this soup, substitute vegetable broth for the chicken broth. The baking soda helps break down the broccoli's cellulose quickly, resulting in a deeper flavor and smoother puree.
