These keto biscuits are incredibly soft, dense, and full of cheesy flavor, with a texture reminiscent of steakhouse dinner rolls. They are prepared in minutes using an air fryer, making them the perfect side dish for any low-carb meal.

Ingredients
- 2 tbsp butter (melted)
- 2 tbsp sour cream (sour cream)
- 2 eggs (large)
- 1 cup almond flour
- 0.5 tsp baking powder
- salt (a generous pinch)
- 1 cup white cheddar cheese (shredded; yellow cheddar can be used)

Place 2 tablespoons of butter in a microwave-safe bowl and melt completely.

To the melted butter, add 2 tablespoons of sour cream and 2 large eggs.

Whisk the wet ingredient mixture vigorously with a fork until well combined.

Add 1 cup of almond flour, half a teaspoon of baking powder, and a generous pinch of salt to the wet mixture.

Fold in 1 cup of shredded white cheddar cheese. Mix well; the batter will be quite wet and creamy.

Preheat the air fryer to 400°F (200°C) for 2 to 3 minutes to allow hot air circulation.

Prepare the air fryer basket: place parchment paper at the bottom, or preferably use silicone molds or paper liners to prevent the batter from spreading too much.

Use a cookie scoop to portion the batter. You can make 5 large biscuits or between 9 and 10 small ones.

Cook at 400°F (200°C). Small biscuits take approximately 5 to 6 minutes. Check at 5 minutes to verify doneness.

Carefully remove from the air fryer and allow to cool slightly before serving. The biscuits should be golden brown and the cheese melted.
Notes
To prevent the parchment paper from flying and burning against the heating element, place it just before adding the batter. For a sweet version, you can substitute the cheddar with mozzarella and omit the salt. Fresh herbs such as rosemary, thyme, or garlic can be added to vary the flavor.
