Preheat your oven to 350°F (175°C).

Set aside 3 tablespoons of the shredded cheese to use for the topping.
- 5
Stir the remaining shredded cheese into the batter until evenly distributed.
- 6
Grease two loaf pans and divide the batter evenly between them.
- 7
Sprinkle the reserved 3 tablespoons of cheese over the tops of the two loaf pans.
- 8
Bake in the preheated oven for 1 hour.
- 9
Remove from the oven and let the bread rest for 5-10 minutes before slicing and serving.
Notes
The author recommends serving this bread warm slathered with salty Irish butter. Any medium-hard cheese can be substituted for the Irish cheddar.
