Ingredients

  • 1 lb ground beef
  • 1 onion (diced)
  • cheeseburger seasonings (such as salt, pepper, garlic powder, or onion powder)
  • 1 cup jasmine rice (uncooked)
  • 8 oz tomato sauce
  • 1.5 cup beef broth
  • 1.5 cup cheddar cheese (shredded, divided)
  • bacon (cooked and crumbled, optional topping)

Steps

  1. 1

In a large skillet or pan over medium-high heat, cook one pound of ground beef with the diced onion.

  2. 2

Season the beef and onion mixture with your preferred cheeseburger seasonings (salt, pepper, garlic powder).

  3. 3

Drain any excess grease from the pan if necessary.

  4. 4

Add the jasmine rice, tomato sauce, and beef broth to the pan.

  5. 5

Stir everything together until well combined.

  6. 6

Bring the mixture to a simmer, then cover the pan with a lid and reduce heat to low.

  7. 7

Cook covered for approximately 18 minutes, or until the rice is tender and the liquid is absorbed.

  8. 8

Remove the lid and stir in a portion of the shredded cheese.

  9. 9

Top the dish with the remaining shredded cheese and optional cooked bacon bits.

  10. 10

Cover for another minute or until the cheese on top is melted, then serve.

Notes

The author mentions that if your kids don't like onions, you can omit them. Leftover breakfast bacon makes an excellent topping for this dish.
