Light, airy honeycomb candy made by microwaving sugar and water, then aerating the hot syrup with baking soda. Break it into pieces to enjoy on its own or crumble over coffee and matcha lattes for a caramel-like flavor and crunchy texture.

Weights are estimates. Together, the ingredients weigh about 80 g before cooking, which is about 20 g per serving.

Steps

  1. Line a heatproof bowl or shallow container with parchment paper, leaving enough overhang to help lift out the cooled candy. Use a microwave-safe bowl for the sugar and water, and keep a chopstick or heatproof utensil nearby.

  2. Add the sugar and water to the microwave-safe bowl. Do not stir. Gently swirl the bowl just enough to moisten the sugar evenly.

  3. Microwave the mixture on high for 3 minutes. The syrup will be extremely hot, so do not touch or taste it during cooking.

  4. Continue microwaving in 10-second intervals, checking carefully after each interval, until the syrup turns amber-gold. Microwave power varies, so rely on the color rather than a fixed total time; avoid letting it become very dark or burnt.

  5. Immediately and carefully pour the amber syrup into the parchment-lined bowl. Work quickly because the syrup begins to set as it cools.

  6. Immediately add the baking soda to the hot syrup. Stir briskly with a chopstick or heatproof utensil just until the baking soda is incorporated and the mixture expands into a pale, foamy honeycomb texture. Do not overmix or handle the candy, as it is dangerously hot and sticky.

  7. Set the bowl aside at once and allow the candy to cool completely and firm up, about 30 minutes. Do not move or handle it while hot.

  8. Lift the cooled honeycomb from the parchment and smash or break it into pieces. Serve as candy or crumble it over coffee, dalgona coffee, or matcha lattes.

Notes

The candy is extremely hot immediately after microwaving; use a heatproof bowl and exercise great care. Store cooled pieces in an airtight container at room temperature, protected from humidity. The candy can dissolve or become sticky when exposed to moisture.
