Baked Croissant French Toast
A wonderfully sweet and luxurious variation of classic French toast, prepared with buttery croissants and fresh berries, baked in the oven.

- 1.5 Croissants
- 1.5 Eggs
- 0.375 tsp Vanilla extract
- 0.125 Bourbon vanilla bean
- 11.25 g Sugar
- 7.5 g Powdered sugar (for dusting)
- 0.0625 tsp Ground nutmeg
- 12.5 g Fresh blueberries
- 12.5 g Fresh raspberries
- 12.5 g Blackberries
- 40 g Heavy cream
- 60 ml Whole milk
- 0.125 tsp Salt
- 0.125 Orange (zested)
- 3.75 g Butter (for the dish)

Preheat the oven to 175 °C (top and bottom heat).

Thoroughly wash the orange with hot water, dry it, and finely grate the zest.

Tear or cut the croissants into coarse pieces.

In a large bowl, whisk the eggs with the milk, heavy cream, sugar, vanilla extract, seeds from the vanilla bean, a pinch of nutmeg, the grated orange zest, and a pinch of salt.

Grease a baking dish with the butter.

Place the croissant pieces in the dish and pour the egg-milk mixture evenly over them. Let it sit briefly so the croissants can soak up the liquid.

Wash and sort the fresh berries (blueberries, raspberries, and blackberries) and distribute them over the croissants.

Bake the casserole in the preheated oven for approx. 30-35 minutes until the mixture has set and the surface is golden brown and crispy.

Allow to cool briefly before serving and dust generously with powdered sugar.
Notes
For an especially intense flavor, you can soak the croissant pieces in the egg-milk mixture the night before and let them sit in the refrigerator overnight.
