Ingredients

  • 9 Shrimp (8-10 shrimp, peeled and deveined)
  • Cajun Honey Spicy Garlicky Rub (TFTI BBQ brand recommended; for seasoning shrimp)
  • 1 tbsp Olive Oil (Graza brand recommended; for cooking shrimp)
  • 3 tbsp Butter
  • 1 Onion (whole onion, diced)
  • 1 bunch Asparagus (chopped)
  • 1 tsp Minced Garlic
  • 1 can Rotel Tomatoes (10 oz can diced tomatoes and green chilies)
  • 0.5 cup Heavy Cream
  • 1 pack Pasta (approx. 8-12 oz; cooked according to package instructions)
  • Salt & Pepper (to taste; Al Frugoni Shop brand recommended)
  • Fresh Parsley (for garnish)
  • Parmesan Cheese (for garnish)

Steps

    Season the shrimp generously with the Cajun Honey Spicy Garlicky rub.

    Heat olive oil in a pan over medium heat. Add the seasoned shrimp and cook until pink and opaque. Once cooked, remove the shrimp from the pan and set aside.

    In the same pan used for the shrimp, add the 3 tablespoons of butter.

    Toss in the diced onion and cook for 2 minutes until it begins to soften.

    Add the chopped asparagus to the pan and cook for another 2 minutes.

    Toss in the 1 teaspoon of minced garlic and cook for 1 minute until fragrant.

    Pour in the can of Rotel tomatoes and the 0.5 cups of heavy cream. Stir to combine and let the mixture simmer for 5 minutes to thicken slightly.

    Toss the cooked shrimp back into the pan along with the cooked pasta. Give everything a good stir so the pasta is well-coated and soaks up the sauce.
