Ingredients
- 2 chicken breasts (diced)
- 1 bell pepper (diced)
- 0.5 tsp salt
- 0.5 tsp peri-peri salt
- 0.5 tsp black pepper
- 0.5 tsp garlic powder
- 1.5 tsp peri-peri seasoning
- 2 tsp peri-peri marinade sauce
- 1 garlic bread baguette (sliced lengthwise down the middle to create an opening)
- Parmesan (for sprinkling; amount unspecified)
- mozzarella (for sprinkling; amount unspecified)
- dried parsley (for topping; amount unspecified)
Steps
- 1
Dice the chicken breasts and bell pepper. Put them in a bowl.
- 2
Add the salt, peri-peri salt, pepper, garlic powder, peri-peri seasoning, and peri-peri marinade sauce. Mix well to coat the chicken and pepper.
- 3
Heat a pan until hot. Add the seasoned chicken and pepper mixture and cook until the chicken is cooked all the way through.
- 4
While the chicken cooks, slice the garlic baguette lengthwise down the middle to make an opening. Place it in an oven preheated to 200°C (400°F) and bake for 10 minutes.
- 5
Remove the baguette from the oven and set it aside. Once the chicken is cooked, fill the opening in the baguette with the chicken mixture.
- 6
Sprinkle Parmesan and mozzarella over the filling, then add dried parsley on top.
- 7
Return the filled baguette to the oven and bake for a further 10 minutes. Serve.
Notes
The source does not specify quantities for Parmesan, mozzarella, or dried parsley, nor does it give a cooking time for the chicken beyond cooking it all the way through.
