Ingredients

  • 0.5 sleeve Biscoff cookies (crushed into fine crumbs; reserve some for topping)
  • 75 g cream cheese (softened)
  • 2 tbsp Biscoff spread (plus extra for drizzling)
  • white chocolate (melted, for coating)

Steps

    Crush the Biscoff cookies into fine crumbs using a food processor or by placing them in a bag and crushing with a rolling pin.

    In a mixing bowl, add the cream cheese and 2 tablespoons of Biscoff spread to the cookie crumbs.

    Mix the ingredients together until a smooth, uniform dough forms.

    Roll the dough into bite-sized balls and place them onto a tray lined with parchment paper.

    Place the tray in the fridge and chill for at least 30 minutes until the balls are firm.

    Melt the white chocolate in a microwave-safe bowl in short intervals or using a double boiler.

    Dip each chilled ball into the melted white chocolate until evenly coated, then return to the lined tray.

    Optional: Before the chocolate sets, sprinkle some reserved Biscoff cookie crumbs on top and drizzle with extra melted Biscoff spread.

Notes

For the best texture, ensure the cream cheese is at room temperature before mixing. If the dough is too soft to roll, chill it for 10-15 minutes before forming the balls.
