Ingredients
- 45 g oat flour (or blended rolled oats)
- 15 g protein powder (flavor of choice)
- 0.5 tsp baking powder
- 1 tsp peanut butter (for the batter)
- sweetener (flav drops or sweetener of choice)
- 95 ml milk (dairy milk, plant milk, or water (90-100ml range))
- 1 tbsp peanut butter (for the center (estimated quantity))
- 1 tsp powdered peanut butter (for the topping)
- water (to thin out powdered peanut butter)
Steps
- 1
Preheat the oven to 180°C (350°F) fan setting.
- 2
In a bowl, mix 45g oat flour, 15g protein powder, 1/2 tsp baking powder, 1 tsp peanut butter, and your sweetener of choice.
- 3
Add 90-100ml of milk, plant milk, or water to the bowl and stir until well combined.
- 4
Pour three-quarters of the batter into an oven-safe bowl or ramekin.
- 5
Place a dollop of peanut butter in the middle of the batter.
- 6
Top the peanut butter center with the remaining quarter of the batter mixture.
- 7
In a small separate container, mix 1 tsp of powdered peanut butter with a small amount of water to thin it out to a pourable consistency.
- 8
Pour the thinned powdered peanut butter over the top of the oat mixture.
- 9
Bake for 15-20 minutes until the oats are set and slightly golden.
Notes
If you don't have oat flour, you can simply blend regular rolled oats in a blender until they reach a fine flour-like consistency. For the center, you can use any nut butter or even a piece of chocolate.
