Ingredients
- 2 NY strip steaks (room temperature)
- Salt (to taste)
- Black pepper (to taste)
- Kinder steak seasoning blend (to taste)
- 2 tbsp Butter (divided use)
- 1 tbsp Butter (for steak basting)
- 1 Garlic clove (crushed for steak basting)
- 1 Shallot (minced)
- 4 Garlic cloves (minced)
- 1 lb Orzo
- 2.5 cup Chicken broth (plus extra if needed)
- 1 cup Heavy cream
- 0.5 cup Parmesan cheese (grated)
- Parsley (optional garnish)
Steps
- 1
Season the room temperature NY strip steaks generously with salt, pepper, and Kinder steak seasoning blend.
- 2
Heat a skillet over high heat. Sear the steaks for 4 minutes per side for medium doneness.
- 3
In the last 2 minutes of cooking the steak, add 1 tablespoon (14g) of butter and the crushed garlic clove to the pan. Baste the steaks with the melting butter.
- 4
Remove the steaks from the pan and let them rest, making sure to keep all the juices.
- 5
In the same pan used for the steak, melt the remaining 2 tablespoons (28g) of butter.
- 6
Add the minced shallot and 4 minced garlic cloves to the pan. Sauté until fragrant, about 2 minutes.
- 7
Add the orzo to the pan and toast for 1 minute, stirring to coat with the butter and aromatics.
- 8
Pour in the chicken broth and bring the mixture to a boil.
- 9
Reduce the heat, cover the pan, and simmer for approximately 10 minutes, stirring halfway through. If the orzo is not yet tender, add a little more broth as needed.
- 10
Stir in the heavy cream and grated parmesan cheese until the sauce is creamy and smooth.
- 11
Adjust the seasoning with additional salt and pepper to taste.
- 12
Slice the rested steak and return it, along with all the accumulated juices, back into the pan with the orzo.
- 13
Top with optional parsley and serve immediately.
Notes
Ensure the steaks are at room temperature before searing to get an even cook. Don't discard the steak juices while resting; they add significant flavor to the final dish.
