Ingredients

  • 4 boneless, skinless chicken thighs (About 170 g each)
  • 1 cup fresh cilantro (Packed)
  • 0.5 cup fresh mint leaves (Packed)
  • 2 green chiles (Adjust to taste)
  • 5 cloves garlic (For the cafreal marinade)
  • 1 tsp black peppercorns (Whole)
  • 1 tsp cumin seeds (Whole spice for the cafreal paste)
  • 0.5 tsp cinnamon (Ground or a small piece of cinnamon stick)
  • 1 tbsp white vinegar (For the cafreal marinade)
  • 2 tbsp lime juice (For the marinade and aioli)
  • salt (To taste, divided between marinade and coating)
  • 1.5 cups all-purpose flour (For dredging)
  • 0.5 cup cornstarch (For a crispier coating)
  • 1 cup buttermilk (For the wet dredge; quantity estimated from the preparation style)
  • 1 L neutral frying oil (Amount used will vary; not all oil is absorbed)
  • 1 head garlic (Roasted for the aioli)
  • 1 cup mayonnaise (For the roasted garlic-lime aioli)
  • 4 burger buns (Toasted)
  • 4 cheese slices (Meltable cheese such as cheddar or American)
  • 0.5 red onion (Thinly sliced for freshness and crunch)
  • 4 slices fresh pineapple (Thick slices or rings, cored if necessary, for charring)
  • 1 tbsp oil (For charring the pineapple)

Steps

  1. 1

Make the cafreal marinade. Blend the cilantro, mint, green chiles, garlic, black peppercorns, cumin, cinnamon, vinegar, lime juice, and salt into a thick, vivid green paste. Add a small splash of water only if needed to help the blender run.

  2. 2

Place the chicken thighs in a bowl and coat them thoroughly with the cafreal paste, working the marinade into all sides. Cover and refrigerate for at least 30 minutes, or preferably several hours, so the chicken absorbs the sharp, herby flavor.

  3. 3

Roast the garlic for the aioli. Heat the oven to 400°F (200°C), wrap the garlic head in foil, and roast for about 30–40 minutes until the cloves are soft, golden, and easily squeezed from their skins. Cool slightly.

  4. 4

Squeeze the roasted garlic cloves into a bowl and mash them into a smooth paste. Stir in the mayonnaise, remaining lime juice, and a pinch of salt. Taste and adjust the lime and salt; the aioli should be creamy, tangy, and garlicky.

  5. 5

Set up the coating station with the flour, cornstarch, and salt in one bowl and the buttermilk in another. Remove the chicken from the refrigerator and let excess marinade drip off, but do not wipe the marinade away.

  6. 6

Dip each marinated chicken thigh into the buttermilk, then place it in the flour-cornstarch mixture and press the coating firmly onto the chicken. Dip it once more in buttermilk and dredge again, creating the double coating that gives the burger its craggy crunch.

  7. 7

Heat the frying oil in a deep, heavy pot to 350°F (175°C). Fry the coated chicken in batches without crowding the pot, turning as needed, until deeply golden and crisp and the thickest part reaches 165°F (74°C), about 6–8 minutes depending on thickness.

  8. 8

Transfer the fried chicken to a wire rack set over a tray so excess oil drains while the crust stays crisp. Season lightly with salt while hot if needed.

  9. 9

Heat a skillet or griddle until very hot. Add the pineapple slices with the oil and cook until they develop dark char marks and become sweet and caramelized, turning once. Remove and set aside.

  10. 10

Toast the cut sides of the burger buns on the hot skillet or griddle until lightly golden. Keep them warm while assembling the burgers.

  11. 11

Spread roasted garlic-lime aioli on the toasted bun halves. Place a crispy cafreal chicken thigh on each bottom bun and immediately top with a cheese slice so it begins to melt.

  12. 12

Add the sliced onion and a charred pineapple slice. Finish with the top bun, gently press the sandwich together, and serve immediately while the chicken is crisp and the cheese is soft.

Notes

The source provides the dish concept and flavor components but not a complete written recipe or quantities. Quantities, frying details, and timing are estimated from the described preparation. Frying oil nutrition reflects the full listed amount and will overstate consumed calories because much of the oil remains in the pot. Serve immediately for the crispest coating.
