Baked Cauliflower with Chipotle Adobo
Whole cauliflower, softened in boiling water and baked with a creamy adobo made with mayonnaise, Greek yogurt, garlic, chipotle, and lime. Finished with more adobo and fresh green onions.

Ingredients
- 1 Whole cauliflower (Approximately 900 g, with the leaves and tough stem trimmed)
- Water (Enough to cover the cauliflower in the pot)
- 1 tbsp Salt (For the cooking water)
- 0.5 cup Mayonnaise
- 0.5 cup Plain Greek yogurt
- 2 Garlic (Peeled cloves)
- 1 Bouillon cube (Mentioned in the audio; crumbled)
- 0.5 tbsp Soy sauce
- Paprika (To taste; estimated at 1 tsp)
- 1 Chipotle pepper in adobo sauce (May include a small amount of its adobo sauce)
- 1 Lime juice (Juice of one lime, approximately 30 ml)
- Green onions (Chopped, for finishing; estimated at 2 tbsp)

Preheat the oven to 350 °F (175 °C). Trim the leaves and the toughest part of the cauliflower stem, keeping the cauliflower whole.

Pour enough water into a large pot to cover the cauliflower and bring it to a boil. Add 1 tablespoon of salt to the boiling water.

Add the whole cauliflower to the pot. Cook it for approximately 20 minutes, until tender when pierced with a knife but still able to hold its shape.

Carefully remove the cauliflower from the water and let it drain well. Place it in an ovenproof baking dish.

Place the mayonnaise, Greek yogurt, garlic, bouillon cube, soy sauce, paprika, chipotle pepper in adobo sauce, and lime juice in a blender.

Blend all the ingredients until you have a smooth, creamy adobo with no large pieces of garlic or chile.

Pour some of the adobo over the cauliflower in the baking dish.

Using a pastry brush, spread the adobo thoroughly over the entire surface of the cauliflower, including the folds and sides.

Bake the cauliflower at 350 °F (175 °C) for 20 minutes, until the adobo looks cooked and the surface is golden and appealing.

Remove the baking dish from the oven and pour the remaining reserved adobo over the top so the cauliflower is well covered.

Sprinkle the chopped green onions over the cauliflower and serve hot.
Notes
